San Cosme Mezcal is made from 100% Espadín agave (Agave angustifolia Haw), which is one of the most common and versatile agave varieties used for mezcal production.
San Cosme Mezcal is produced in Santiago Matatlán, Oaxaca, Mexico, a region renowned as the "World Capital of Mezcal" for its rich history and expertise in mezcal making.
"Joven" means "young" in Spanish. San Cosme is a Joven mezcal, meaning it is unaged in barrels after distillation, allowing its fresh, pure agave flavors and characteristic smokiness to be most prominent.
San Cosme follows traditional mezcal production methods, which include slow roasting the agave piñas in conical earthen pits (often with mesquite wood), crushing them with a tahona (stone wheel), fermenting in wooden vats, and double distilling in copper pot stills.
San Cosme Mezcal is known for being well-balanced with subtle smoky notes, complemented by hints of cooked agave, caramel, herbs, and earthy undertones, often with a smooth and pleasant finish. It's often described as approachable for new mezcal drinkers.
