What makes the Clase Azul Mezcal Durango special?

The heart of Clase Azul Mezcal Durango lies in the agave fields of Durango, where only the finest, mature agave plants are selected. The uniqueness of Clase Azul Mezcal Durango can simply be defined within the following three characteristics: The Appearance, The Agaves and The Production Process.

The Appearance:

There are two indigenous Mexican groups involved, the Mazahaus make the ornate black decanter while the Wixárika make the colourful beaded cap.

Black Bottle

One of the first things you will notice about Clase Azul Mezcal Durango is its striking black bottle. This marks a departure from Clase Azul's traditional hand-painted cermaic tequila bottles. The black bottle, madde by the indigenous Mazahaus, is designed to represent he dark, smoky flavours of the mezcal inside.

Beaded Cap

The beaded cap is a limited edition accessory, handcrafted by the indigenous Wixárika artisans. Each cap is unique and takes hours to create the intricate beadwork which is a representation of the rich culture and traditions of Mexico. The cap is designed to fit perfectly on top of the iconic Clase Azul Mezcal Durango bottle, adding a touch of elegance and artistry to the already beautiful bottle.

The Agave:

Clase Azul Mezcal Durango is made from 100% wild agave durangensis, also known as cenizo. This agave is native to the state of Durango in Mexico and is known for its unique flavor profile. It takes around 12 years for the agave to mature before it is harvested for mezcal production.

The Production Process:

Fire

The agave plants used for Clase Azul Mezcal Durango are cooked in underground pits for several days. These pits are lined with volcanic rocks and filled with wood and charcoal. The wood is set on fire, and the agave plants are plaed on top, covered with a layer of earth. This process allows the agave to cook slowly and absorb the smoky flavors from the fire before being crushed by a tahona (a large stone wheel) to squeeze out the juices.

Fermentation

The juice is then fermented in wooden vats for 8-10 days before being distilled in copper stills.
